At Ghazal Fine-Dine Restaurant in Tamarack, our Slow Braised Lamb Shank begins with carefully sourced bone-in lamb, seared to lock in the juices, then submerged in a slow-simmered gravy of caramelised onion, tomato, ginger-garlic, garam masala, kashmiri chilli, cardamom, clove and bay. Hours of low-and-slow braising melt the connective tissue down to silk — the meat falls from the bone with the gentlest nudge of a fork.
Finished with a hint of fresh coriander, slivered ginger and a glaze of the reduced cooking liquor, the lamb shank is served alongside fluffy basmati and a basket of freshly baked naan to mop up every last spoonful.
